Paleo Double Chocolate Chip Muffin Tops with Coconut Whipped Cream and Strawberries

Oh my chocolate craving delight.

I am excited to introduce to you Mikey's double chocolate chip muffin tops (or chocolate delight as I'd like to call them).  I talked about Mikey's tortillas last week when I shared a delicious marinade recipe with you that can be used for shrimp, fish, or other meats!  Well, Mikey's did not disappoint us when I assembled dessert that same evening using their double chocolate chip muffin tops.  They're also certified Paleo so I pretty much feel like they’re guilt free.  #winning

I was trying to keep the hubs on Whole 30 but with his travel schedule, etc. I have introduced a few Paleo treats here and there.  It's a pretty large dietary change for him so I think these occasional treats will be helpful to keep him eating healthier and not get discouraged by the things he's missing.

Well, the Mikey's double chocolate muffin tops were the perfect fix and I didn't have to bake!  I did whip up some Paleo coconut whipped cream (recipe below) and added some strawberries.  I dabbled with a two tier versus a one tier dessert and went back to one tier.  Truth be told, the hubs ate his and half of mine so if you assemble this treat for a man you may want to make it a two tier! ;)  He said it was reallllyyyy good and he couldn't tell it was healthy (healthier, that is)!!!

Shopping List

  • Mikey's Double Chocolate Chip Muffin Tops (or other flavor)
  • 1 can full fat coconut milk, refrigerated overnight
  • 2 tbsp monk fruit sweetener (optional)
  • 1 tbsp pure vanilla extract
  • organic strawberries

First, make sure to refrigerate the can of coconut milk overnight.  This will allow the "milk" to solidify.  When ready to prepare the coconut whipped cream, scoop out the solid portion from the top of the can into a metal mixing bowl and discard the remaining water.  Add in 1 tbsp pure vanilla extract and 2 tablespoons of monk fruit sweetener (optional).  You can substitute the monk fruit sweetener for honey, agave, or a small amount of Stevia if you prefer.  Whip the ingredients together using a hand mixer.  Return to the refrigerator until ready to use.

Dethaw Mikey's double chocolate chip muffin tops per the instructions on the box.  I left ours on the counter for a couple of hours until room temperature and we had room to sample dessert after we ate the shrimp tacos!  

Add the coconut whipped cream on top of the muffin top along with sliced strawberries.  You can use any other fruit you prefer, of course!

This is the monk fruit sweetener I bought a while back.  I haven't dabbled with it much, but we didn't have any funny tastes in the coconut whipped cream at all.  It tasted like real whipped cream!
