Cabbage & Turkey Sausage - Gluten Free

Hello dear friends!

I have been eating low carb lately to try to break my sugar addiction (hello, quarantine life!) and thus thinking of easy and quick recipes to whip up on a busy day. One of my Mammaw’s favorite things is cabbage and sausage and she was on my mind that day.

I decided to give it a whirl, sans recipe, and considering I’ve never actually made cabbage and sausage before, I think it turned out AMAZINGLY! I ate two servings (oops!) and the hubs loved it too. #winning

The best part about it? Well, everything is the best part. It’s low carb, high fiber, easy to prepare, and delicious.

UPDATE: I made this again since I wrote this post and used pre-shredded coleslaw from the grocery store and loved the texture even more!

There are lots of ways you can make this dish to your taste preference, but I kept it simple because it was an experiment (for me). Also, there are plenty of Paleo/Whole 30 compliant sausages out there but I used regular ol’ Butterball Turkey Sausage because our local grocery store doesn’t have a healthier version (that I have found…).

Shopping List

  • 1 package turkey sausage, sliced
  • 1/4 head cabbage, sliced, then cut (use more if desired)
  • 1/2 white onion
  • 3 cloves garlic, minced
  • 2 tbsp red wine vinegar
  • 2 tbsp coconut oil
  • 1 tsp sea salt (or more to taste)

Instructions:

  1. Heat 1 tbsp coconut oil in a sauté pan over medium heat. Add the sliced sausage links and cook thoroughly - about 4 minutes each side.

  2. When the sausage is done cooking, remove it from the pan and put it on a plate to the side.

  3. Add the remaining 1 tbsp coconut oil to the pan and add the onions. Sauté until opaque, about 3-5 minutes.

  4. Add in the minced garlic, cabbage, red wine vinegar, and salt. Cover and sauté until thoroughly cooked, about 10 minutes, stirring occasionally.

  5. Once the cabbage is soft and cooked, add the sausage back to the pan and stir to combine. Allow to cook together for another 3-5 minutes.

  6. Serve & enjoy!

Note - You may want to add more vinegar for more flavor. I personally love vinegar! You can also add in other seasonings for flavor like Tony Chachere’s.
