Easy Chocolate Haystacks

Hello there, friends.

I thought I’d share a quick and easy post for a recipe I’ve shared before. You can make this with regular milk chocolate, dark chocolate, or using Enjoy Life chocolate chips that allow it to be qualified as "Paleo" friendly and Vegan friendly.

This is always a crowd pleaser, super easy to make, and would make a great Valentine’s Day treat for your loved one(s).

Shopping List:

  • Slivered almonds (other nuts optional)
  • 1 bag of choclate chips
  • Sea Salt

Seriously.  That's it.

Heat the oven to 350* F.  Pour the slivered almonds onto a foil lined baking sheet.  Heat them up until slightly roasted but warmed (not burned).  Remove from the oven and pour them into a mixing bowl.  Add in the full bag of chocolate chips - you can use less chocolate if you prefer less chocolate coating over the almonds.  Stir thoroughly to allow the chocolate to melt and coat the almonds.

Using a spoon, scoop and drop spoonful's of the chocolate covered almonds onto a parchment lined baking sheet or plates.  Spring sea salt over the tops of them before the chocolate begins to cool so that the salt sticks.  Place the baking sheet or plates into the refrigerator to allow the chocolate to harden, approximately 30 minutes.  You may also place in the freezer for a short amount of time.

Once the chocolate is hardened back up you may place them out to serve or wrap them up as a gift!

The sea salt I had on hand was not coarse so it’s hard to see it here, but it was delicious! This photo is before the chocolate hardened. I placed the plates in the refrigerator for an hour or so.
