What a busy month this has been and I cannot believe we only have one week remaining until October. This “last Wednesday of the month” post feels very early to write with another full week ahead; however, this is the last Wednesday so here we are. =)))

What I’m eating this week:
This week I ate or will be eating enchiladas suizas, a can of soup, leftovers from eating out, and going out to eat. I may make a can of tuna as I need to start using what’s been in my pantry and freezer. I have been pulling out frozen leftovers lately as well.
I recently made chicken enchiladas suizas using this recipe, except I cooked the chicken in my crockpot like I used to do to make verde chicken tacos. I simply place the boneless skinless chicken breasts in the crock pot with a jar of green salsa. When it’s fully cooked I shred it and place it back in the sauce. It’s simple, moist and flavorful. I did opt to strain the chicken before assembling the enchiladas because the recipe calls for it’s own suizas sauce and I didn’t want there to be too much extra moisture. I think it turned out perfectly.
This past month I also made my Cajun chicken and shrimp crockpot dish. It’s super easy and so delicious. I have the leftovers in my freezer as well.

What I'm reminiscing about:
September 2016. I launched my blog site after purchasing the domain and taking a leap by paying for Squarespace because I didn’t want to be capped on however many posts I could share for free on some of the free blog sites way back when. I paid for an online marketing course that I tried to work my way through while working full time, but didn’t ever complete but still have access to. I thought I’d be willing to put in the effort to “market” my blog appropriately to grow it as a business but also just wanted to share my life, crafts, recipes, and any knowledge gleaned from the books I was reading without the pressure of “selling” anything for income. I have mixed thoughts on that in hind site but at the same time I am glad I remained authentic in my journey to share what I loved.
This was my first blog post about a recipe: click here. In the marketing course it talked about coming up with catchy titles and I tried for a few posts, but ultimately gave up on doing that as I felt silly and just titled the posts for exactly what they were about.
Nine years later, I have taken some breaks from writing when life became overwhelming or when I didn’t feel inspired. But, for now - my little blip on the interwebs still exists.
What I'm loving:
A few things:
1) This photo of Lorenzo. I paused in front of the mirror as I was walking around holding him for a minute and he yawned precisely when I took the photo. It makes me smile
2) This lightweight, moisture wicking jacket from Old Navy. I have worn it over and over this past month both in Houston when it’s been outrageously hot and when traveling in cooler temps.

3) My fall scented candles and my fall/Halloween decor. It makes me happy to have my decor out for the season.
What I've been up to:
I’ve battled extreme allergies from July into September. It was awful. I tried every allergy medication, decongestant, nose spray, saline rinses, etc. Ultimately nothing helped.
This is the look of low oxygen misery.
I took a trip at the beginning of the month, but it didn’t resolve my issues (unlike my trip to the Jersey shore at the end of July/beginning of August that gave me a reprieve). I ended up getting steroids and a new nose spray combo from my allergist and praise the good Lord, my symptoms subsided within the first day on steroids. Then, I left town to get away from the “extreme dust, dust mites, and dander” levels and I was ridiculously grateful to be able to breathe again. HOORAY! So far, my allergies have not flared up since I returned home last week.
I explored new places and familiar places as well as new trails and new footpaths in the familiar places. It felt great to be in cooler temperatures, connect with nature, and give myself time and space away from home.
What I'm dreading:
I am dreading anything that may possibly blow in any type of dust, ragweed, or other allergens into the air.
What I'm working on:
Getting back into a work out routine now that I can breathe again. =) With that will also determine if I can get back up to my running endurance to be able to plan a half marathon this year. There have been countless hindrances that have set me back and knocked me off track so I am giving myself grace. That being said, if I can get back at it then I may be able to complete one in December.
Lots of life things and decisions to be made, the never ending to-do lists, and trying to keep my blog on my radar so that I can share things more frequently.

What I'm excited about:
I am super excited that we’ve reached the fall solstice and that it’s getting darker earlier at night. I’m one of the few people that enjoys the shorter daylight time of year. It helps me anticipate the holidays and fosters a cozy vibe at home.
What I'm watching/reading:
Watching:
I’ve officially gotten hooked on Desperate Housewives. I’m in season 5 and have enjoyed putting it on in the evenings while I work on other things such as this blog post. =)
Reading:
I didn’t read as much this past month because I could barely work out, much less run with my allergies. My current book that I am loving and learning from while on the treadmill is:

What I'm listening to:
I’ve been listening to ample YouTube fall themed scenes with jazz music. I walked and listened to Lord Huron over and over while hiking/walking the trails on my trips. Other than that I have found myself listening to some old(er) country music like Diamond Rio.
What I'm wearing:
I’ve been adding more and more to my LTK profile throughout the month so you can always follow along with me there to see what outfits or home décor items I’m sharing! There are outfits on there that didn’t make it out of the house yet OR that I didn’t take a photo of when I wore it in real life.

I’ve found some great, inexpensive items on SHEIN lately and plan to purchase more things for fall. It’s been a nice refresh to my closet without breaking the bank. These dresses as well as this sheer top were SHEIN finds.

I’m loving these shrugs from Walmart. They match the coordinated athletic items they have, but can also be worn with other outfits.

It’s no secret that I love Old Navy’s work out clothes and wear their Powersoft line all the time. I’ve also fallen for their dynamic fleece since last fall as well. Plus, I am obsessed with their “boxwood” color that’s a mix between plum and burgundy? I don’t know how to describe it, but it is pictured below. I have the leggings and other coordinated items as well.

OCTOBER! I am excited for Halloween movies such as Addams Family and Hocus Pocus, Hallmark’s Countdown to Christmas begins October 17th, any and all fall things, and hopefully cooler temperatures.
